Stir-fried purslane with ginger and green peas

275gr vegetables p.p.
Ingredients
2 persons
200g peas (frozen) |
½ lemon |
1 tablespoon oil |
250g purslane |
piece of ginger root (size of ½ inch) |
1 red onion |
Preparation
1. Peel the onion and cut it into half rings.
2. Cut the roots from the purslane. Carefully wash the purslane in plenty of cold water. Drain the vegetables well.
3. Peel the ginger and grate it.
4. Fry the onion with the ginger in the oil until fragrant.
5. Add the purslane and frozen peas and stir-fry the vegetables for a few minutes until tender.
6. Season the vegetables with some grated lemon zest and a squeeze of lemon juice.
Menu suggestion: Delicious with a rib chop and potatoes.
