Peas are legumes. They grow about 10 at a time in a pod. Fresh peas are harvested unripe. The sugar in the pea has not yet been converted into starch, which makes them taste deliciously sweet. This is also why they are counted as vegetables. So botanically the pea is a legume, but nutritionally it is not.

Preparation & storage

    Storage
    You can keep peas in the fridge for up to 5 days. Preferably eat them as fresh as possible, within a few days. Fresh peas can also be kept on the fruit bowl for up to 2 days.

    Fresh peas can also be frozen. Just blanch (heat briefly) just before freezing.

    Canned or bottled peas can be kept in the larder. Have you opened the can or glass? Then transfer the peas to a sealable storage container. You can then store the peas for another 2 days in the fridge or 3 months in the freezer.

    How can I tell if fresh peas are no longer good? The peas are limp or mouldy. You can quickly recognise this decay by looking, smelling or tasting them.

    How can I tell if peas from a tin/glass can are no longer good? The peas will be mouldy, discoloured or cloudy. You can quickly recognise this deterioration by looking, smelling or even tasting.

    Preparation
    Press the base of the pod with your thumbs until it pops open and unzip both pod halves. Detach the peas, place them in a sieve and rinse with cold water.
