


Peas



Peas are legumes. They grow about 10 at a time in a pod. Fresh peas are harvested unripe. The sugar in the pea has not yet been converted into starch, which makes them taste deliciously sweet. This is also why they are counted as vegetables. So botanically the pea is a legume, but nutritionally it is not.

Storage
You can keep peas in the fridge for up to 5 days. Preferably eat them as fresh as possible, within a few days. Fresh peas can also be kept on the fruit bowl for up to 2 days.
Fresh peas can also be frozen. Blanch (heat briefly) just before freezing.
Freeze frozen peas in the freezer.
Canned or bottled peas should be kept in the pantry. Has the can or glass been opened? Then transfer the peas to a sealable storage container. You can then store the peas for another 2 days in the fridge or 3 months in the freezer.
How can I tell if the peas are no longer good? The peas are mouldy, discoloured or cloudy. You can quickly recognise this deterioration by looking, smelling or even tasting.

Press the base of the pod with your thumbs until it pops open and unzip both pod halves. Detach the peas, place them in a sieve and rinse with cold water.
