


Asparagus peas



The asparagus pea or wing bean is the pod of a legume (plant) with deep red flowers. Both the stem and the young pod can be eaten as vegetables. The crunchy stem has the delicate flavour of an asparagus. The pods have a firm texture and a sweet, slightly almondy flavour.

Storage
Asparagus peas are best prepared as soon as possible so they do not lose their crispness.
Prepare
Wash the pods and cut a small piece from the top and bottom before preparation. Do not eat the pods raw. Briefly boiling, steaming or stir-frying is sufficient preparation.

Refrigerator: 2-3 days
Preparation times
Cooking: 5 - 7 minutes
Stir-frying: 3 - 5 minutes
Microwave oven: 3 - 5 minutes
Braising: 8 - 11 minutes
Steaming: approx. 5 minutes
