


Broad beans



With this summer vegetable, anyone can literally cook their own beans. Broad beans are the seeds of a fairly large, felt-like pod. Young broad beans are at their tastiest. They have a mild, full flavour. Broad beans are also called "fat thumbs" or in Brabant, "farmers' boxes". Broad beans are healthy. They contain high levels of vitamins B and C. Broad beans are in season in the Netherlands in July and August. It is best to store broad beans in the fridge.

Storage
Fresh bean pods should be stored in the fridge, preferably in their skin/ pod. This prevents the beans from drying out.
Store broad beans in glass in a dark place to avoid discolouration. Has the jar or can been opened? Then the beans will keep for a few days in the fridge.
Prepare
Put your thumbs on the rounded side of the pod, push it open and remove the beans. Put the beans in plenty of water with a splash of (semi-skimmed) milk to keep the beans white.
Double dipping: You can dip the beans again after cooking. You do this by removing the stiff skin. You will then get beautiful bright green beans.
Do not eat broad beans raw. They naturally contain a toxic substance that becomes harmless when cooked.
Frozen beans do not need to be thawed before cooking or stir-frying. You only need to heat canned or bottled broad beans for a few minutes.
