String beans, green beans and haricots verts: they are all beans from the same family. Haricot vert is its fancy straight, slender sister. Haricots verts are also called French beans. They are slightly less crunchy than green beans. They also tend to be slightly darker green in colour.

Preparation & storage

    Storage
Haricots verts can be stored in the fridge for 1-2 days. Haricots verts are sensitive to cold spoilage, so do not keep them colder than 5°C.

Haricots verts can also be stored on the fruit bowl for 3-5 days.

Fresh haricots verts can also be frozen. Blanch (heat briefly) just before freezing.

Store canned or bottled haricots verts in the larder. Has the tin or glass been opened? Transfer the haricots verts to a sealable container. You can then store the haricots verts for another 2 days in the fridge or 3 months in the freezer.

Do you have leftover cooked haricots verts? Put the haricots verts in a sealable storage container. You can then store the haricots verts for another 2 days in the fridge or 3 months in the freezer.

How do I know if fresh haricots verts are no longer good? The haricots verts are limp or mouldy. You can quickly recognise this deterioration by looking, smelling or tasting.

How can I tell if haricots verts from a tin/glass are no longer good? The haricots verts are mouldy, discoloured or cloudy. You can quickly recognise this deterioration by looking, smelling or even tasting.

    Preparing
Wash the haricots verts. Cut the tips off the haricots verts. Cook them in a small layer of water (2 cm) with the lid on the pan.

Raw beans naturally contain a toxin (lectin) that is rendered ineffective by heating. Therefore, do not eat haricots verts raw.
