Green beans are also known by the names green beans or princess beans. Green beans can be boiled, stewed, braised and stir-fried. These quality Dutch field beans come in the common green version and the more rare yellow version. There is another variant: the haricot vert. This is a slender and straight bean that does especially well at festive dinners.

Green beans can be stored in the fridge for 1-2 days. Green beans are sensitive to cold spoilage, so do not keep them colder than 5°C.

Fresh French beans can also be frozen. Blanch (heat briefly) just before freezing.
