Everyone knows them: the flat beans that can grow up to 25 cm long. We are talking about the string bean, the family of the green bean. The string bean is eaten sliced, as its name suggests. This way, the flavour really comes into its own. You can prepare the string bean in pieces or strips. You can serve it as a side dish or in combination with other vegetables.

Storage
Whole string beans can be kept in the fridge for 2 days. Sliced runner beans can be kept in the fridge for 1 day, preferably prepared and eaten the same day.
You can also store string beans on the fruit tray for 2 days. Do not store sliced beans next to kiwi, pear, apple or banana. These fruits secrete a gas, ethylene (formerly known as ethylene). This causes the vegetables to spoil faster.
Fresh string beans can also be frozen. Just blanch (heat briefly) just before freezing.
Canned or bottled string beans can be kept in the larder. Have you opened the tin or glass? Transfer the string beans to a sealable storage container. You can then store the string beans for another 2 days in the fridge or 3 months in the freezer.

How can I tell if fresh runner beans are no longer good? The French beans are limp, have a sour smell or are mouldy. You can quickly recognise this decay by looking, smelling or tasting.

Preparation
Wash well, cut off the tips on both sides and consider how you will cook or stir-fry them: in large pieces or thin strips.
String beans should not be eaten raw. Raw beans naturally contain a toxic substance that becomes ineffective when cooked.
Pot and canned beans and those from the freezer are no longer raw.
