Cod with summer vegetables and baby potatoes

220gr vegetables p.p.
Ingredients
2 persons
400 grams of new potatoes |
100 grams of carrots |
100 grams of string beans |
100 grams of snow peas |
1 yellow pepper |
2 pieces of cod fillet |
2 teaspoons of fish seasoning without salt |
3 tablespoons of liquid margarine |

Preparation
Need a nice, light summer meal on the table quickly? Then try this main dish of cod and summer vegetables with a Mediterranean twist!
1. Wash the potatoes and halve large ones.
2. Cook the baby potatoes in a little water with a lid on the pan for about 6 minutes.
3. Clean the vegetables.
4. Cut the carrots into diagonal slices, the string beans into shreds, the mangetout into pieces and the pepper into cubes.
5. Rub the fish with the fish seasoning.
6. Heat 2 tablespoons of margarine and brown the fish on both sides.
7. Add the vegetables with some pepper and a dash of water.
8. Stew with a lid on the pan for 10 minutes.
9. Fry the baby potatoes in the remaining margarine until golden brown and serve.
