Spicy broad beans

Spicy broad beans

230gr vegetables p.p.

Ingredients

2 persons

½ tablespoon tomato puree
1 tablespoon liquid margarine
1 small onion
1 small chilli
1 kg fresh broad beans or 400g frozen broad beans

Preparation

1. Shell the fresh broad beans.
2. Cook the fresh or frozen beans in little water for about 6 minutes until tender.
3. Clean and chop the onion and pepper.
4. Drain the broad beans.
5. Heat the margarine and fry the onion and pepper in it.
6. Add the broad beans, some water and the tomato puree and warm them in this mixture.

Menu suggestion: Delicious with quinoa with spring onions and wedges of boiled egg.
