




Asparagus





Asparagus is the white or green shoots on the root of the asparagus plant. The difference: white asparagus grows underground, i.e. in the dark, and green asparagus is actually grown in the light. The flavour of asparagus is mild, with a very distinctive aroma. Green asparagus has a slightly stronger flavour.

Even with asparagus, the fresher the better.
Asparagus can be kept in the refrigerator. Fresh white asparagus can be wrapped in a moist, clean tea towel. They will then keep in the fridge for 2-3 days.
Green and purple asparagus are best kept in an open plastic bag in the fridge. It is best to keep the underside of green and purple asparagus wet though.

Prepare
Cut a piece off the bottom (about 2 cm) before use. White asparagus should be peeled with a peeler or an asparagus peeler. From the head to the end. Green asparagus do not need to be peeled.
Place the asparagus in the water until boiling to keep them juicy. Cook asparagus in plenty of water. The vegetable is done when the bottom is soft.
Or do it like this: put asparagus with cold water in a pan. Bring the water to the boil and turn off the heat. Let the asparagus cool in the cooking water. You can do this in advance. Do you need the asparagus? Then just bring the water to the boil and remove the asparagus from the pan.

Cooking: 3-6, then cook for 10 minutes in the cooking water
Stir-frying: 2 - 3 minutes
Deep-frying: 2 - 3 minutes
Steaming: 8 - 13 minutes

Cooking: 3 - 6 minutes
Stir-frying: 3 - 5 minutes
Microwave oven: 4 - 6 minutes
Deep-frying: 3 - 4 minutes
Steaming: 8 - 10 minutes
Cleaning asparagus
First cut off the woody underside of white asparagus. Then peel them with a peeler from a few cm below the head downwards. It is important to peel them well, otherwise they taste a bit bitter and fibrous. If not processed immediately, put them in water with milk or lemon juice to prevent discolouration. There is no need to peel green asparagus. However, do cut off the woody underside.
