Asparagus salad with prawns

265gr vegetables p.p.
Ingredients
2 persons
½ shallot |
6 sprigs of chives |
2 tablespoons of olive oil |
500 grams of asparagus |
4 sprigs of (flat) parsley |
150 grams of peeled shrimps |
1 tablespoon of lemon juice |
Preparation
1. Peel the asparagus and cut the woody part off the bottom.
2. Boil the asparagus in plenty of water for 10-12 minutes. Drain and cool the asparagus.
3. Chop the piece of shallot very finely.
4. Clean the herbs and cut them small.
5. Mix the shallot with the herbs, lemon juice, oil and some pepper.
6. Spoon in the prawns.
7. Divide the asparagus between 2 plates and spoon the shrimp mixture on top.
Serving suggestion: Delicious with baked new potatoes.
