


Parsley



The fresh, savoury flavour of parsley makes it an indispensable herb in the kitchen. Parsley is high in vitamin C and minerals. There are two types of parsley: curled parsley and 'flat' parsley which has a bit more flavour. Curly parsley is very suitable as a garnish on cold dishes and soup. Flat parsley can also be used in hot dishes.
Preparation & storage
Storage
Place parsley with stems and roots in a glass of water or store in cling film in the fridge. Parsley will keep for a few days like this.
Do you have leftover parsley? Wrap the leftover herbs in wet kitchen paper. Store them in the crisper section of the fridge.
In the freezer, parsley can be kept in a well-sealed container or bag for up to 2 months at a minimum of -18°C.
Prepare
Add the leaves to the dish shortly before serving. Do not cook them as the aroma disappears and the flavour can even become bitter.
Curly parsley is mainly used as a garnish. Flat or Italian parsley can be added to hot dishes. Flat parsley retains its flavour better than curled parsley.
