


Coriander



Coriander is native to western Asia. Fresh coriander leaves have a typical mildly sweet, aniseed-like flavour. The smell is very aromatic. You can use the herb in countless stews, chicken dishes, salads and sauces, especially in Indian, Moroccan and Thai cuisine. According to tradition, this herb promotes 'immortality'. Coriander sprigs are best kept in the fridge.

Store
Fresh is best! Only fresh coriander has the typical aroma. You can store fresh coriander in a cool place in cling film for a few days.
You can also freeze coriander, but it will lose its beautiful green colour and flavour. In the freezer, coriander can be kept for up to 12 months in a well-closed container or bag at a minimum of -18ºC.
Preparing
Wash and cut the spice. Do not add too much (in one go) because of its strong aromatic flavour.
Finely chopped leaves can be used as seasoning and garnish.
You can also stew the leaves and stems.
