Greek string beans with lima beans

395gr vegetables p.p.
Ingredients
2 persons
2 red onions |
1 clove garlic |
400g string beans |
2 tomatoes |
2 tablespoons oil |
1 tablespoon tomato puree |
1 can lima beans (possibly white beans or cannelli beans; drained weight approx. 250g) |
½ bunch (flat) parsley |
½ small wholemeal baguette |
Preparation
This delicious main dish with lima beans and string beans with a Greek twist is packed with vegetables (395 grams!), easy to make and on the table within half an hour.
1. Peel and chop the onions and garlic.
2. Wash the string beans and cut off the tips on both sides. Cut the string beans into lozenges.
3. Wash the tomatoes and cut into cubes.
4. Fry the onion and garlic in the oil until soft. Fry the tomato puree for a few minutes.
5. Add the string beans, diced tomatoes and 100 ml water. Stew the string beans for about 10 minutes until tender.
6. Rinse the lima beans in a sieve and drain.
7. Stir the lima beans into the string beans and heat through well.
8. Wash the parsley and chop it coarsely. Mix the parsley into the dish and warm a little more.
9. Serve with the baguette.
