Oriental stir-fried asparagus with snow peas

335gr vegetables p.p.
Ingredients
2 persons
500 g white asparagus |
50 g snow peas |
3 spring onions |
1 red pepper |
1 garlic clove |
1 tablespoon Japanese soy sauce |
1 tablespoon (sesame) oil |
2 teaspoons grated fresh ginger or 1/2 teaspoon ginger powder |
75 g unsalted cashew nuts |
Preparation
1. Peel the asparagus from the top down and cut a piece of about 2 cm from the bottom. Cut the asparagus diagonally into pieces of about 4 cm.
2. Cut the tips of the snow peas and halve them.
3. Cut the spring onions into pieces of around 2 cm.
4. Remove the seeds from the pepper and chop finely.
5. Finely chop the garlic.
6. Heat the asparagus pieces (not the asparagus heads) for 3 minutes in the microwave at full power. Remove the dish from the microwave and leave to cook on the counter for a while.
7. Heat the oil in a wok and gently fry the garlic, red pepper and ginger until the mixture becomes fragrant. Then spoon in all the asparagus pieces, snow peas and spring onion and stir-fry the vegetables for about 3-4 minutes on high heat.
8. Add the soy sauce and 2 tablespoons of water to the wok and heat the vegetables (covered) for about 3 minutes.
9. Stir in the cashew nuts and reheat without cover. Enjoy your meal!
