Artichokes are actually the flower buds of a thistle. These grey-green flower buds consist of many small leaves folded around a flower base. Then the petals open and the 'hay' inside develops into a beautiful purple flower. Beautiful to look at, but a flowering artichoke is no longer edible.

    Storage
    An artichoke dries out easily. Therefore, wrap an artichoke in a damp tea towel.

    You can keep an artichoke in the fridge (wrapped in a damp tea towel) for 4-7 days.

    Artichokes can also be kept in the freezer in a tightly-sealed plastic bag or container. First blanch for about 7 minutes (heat briefly). The artichoke will keep for up to 6 months at a minimum of -18°C.

    Preparation
    If the long stem is still present, cut it off completely to about 10 cm from the bottom. That piece of stem is also tasty if you peel it well. Cut brown tips off the leaves and remove the top leaves, they are usually tough.

    Always sprinkle breaking or cutting surfaces with lemon juice. If you don't, the artichoke will quickly turn brown.

    Cook the artichoke in enough water for about 15 to 40 minutes (depending on the size). Try to pull off one leaf. Does that go easily? Then the artichoke is cooked.

    When eating the whole artichoke, pick leaf by leaf from the artichoke and suck out the soft flesh at the bottom of the leaf.

    Remove the last inner leaves and the 'hay' and do not eat them. You can eat the bottom.

    Cooking: 15-40 minutes (depending on the size, if the leaves detach easily, the artichoke is done)
    Grilling: 30 minutes (small artichokes)
