Jerusalem artichoke is also known as topinambur or Jerusalem artichoke. Jerusalem artichokes are whimsically shaped tubers. They are light brown, violet, pink or white in colour. Jerusalem artichoke is somewhat sweet. Some people compare it to oysters or artichoke with a slightly nutty flavour. Fresh Jerusalem artichokes can be eaten raw. They are then nice and crispy.

Jerusalem artichokes can be kept in the fridge for up to 7 days.
Preparation
To preserve the flavour as much as possible, it is best to boil them in their skins (5-10 minutes). Add some vinegar or lemon juice to the water while boiling to prevent discolouration. You can then 'shock' them in their skins like potatoes or boiled eggs. The skin then comes off easily.

Wash the Jerusalem artichokes before use and brush them briefly. The skin is very thin, so peeling is not necessary.
