

Cardoon


Cardoon is a stem vegetable. In appearance, the vegetable resembles a giant bush of celery. It is related to the artichoke. Only the artichoke eats the flower bud and the cardoon the stem. The taste of cardoon is similar to artichoke. The inner stems of the bush are tender. The outer stems are a bit more bitter. Cardoons are best kept in the fridge.

Storage
Keep cardoons in the fridge, where they will keep for 2-3 days when cooked.
Preparation
Remove the outer fibrous stems. Pull off the fibres from the coarser stems. Place cut pieces of cardoons in a bowl of water with a splash of vinegar or lemon juice. This will keep the stalks nice and white.

Refrigerator: 2-3 days
