


Celery



Celery is the young, pale green stalks of the celery plant. Every classic Italian tomato sauce starts by frying the golden trio: a finely chopped onion, carrot and a stalk of celery. Nowadays, celery, because of its fresh flavour, is best known as a salad vegetable. But celery is also delicious sautéed, stewed or boiled.

Celery will keep for up to a week in the fridge.
Store leftover celery in the fridge. You can wrap it in cling film or put it in a sealed storage container.
You can store raw celery in the freezer (at a minimum of -18°C) for up to 12 months. Blanch the celery briefly for 2-3 minutes before freezing. You can then store the celery in a tightly sealed plastic bag or container.
You can also store cooked celery in the freezer for up to 12 months.
How can I tell if celery is no longer good? Pre-cut celery gives off a sour smell, becomes limp or mouldy. You can quickly recognise decay by smelling, looking or tasting.
Prepare
Cut a slice from the foot and remove any leaves. Do not throw away the leaves. You can use the leaves as herbs. You can also make a delicious broth from it.
Check the stem for hard veins. If you feel any, you can remove them by cutting a piece (almost) off the top or bottom of the stem. Then pull the vein away along the stem.
Afterwards, wash the stems in plenty of water.
