Lavas

Lovage is a herb with a strong aroma reminiscent of Maggi. Hence the name maggi plant. The dark green, rather large leaves give dishes a slightly savoury taste, without containing much salt. It is therefore a perfect seasoning in dishes for people who have to eat on a low-salt diet. Lovage leaves are best kept in the fridge.
Preparation & storage
Storage
Store the leaves wrapped in cling film in the vegetable drawer of the fridge.
You can also freeze lovage. Cut the herb finely and freeze it loose on a plate or plate. Put the frozen lovage in bags or trays. Frozen lovage will keep for several months.
You can also dry lovage.
Drying is done like this:
- Spread the leaves on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble them? Then they have dried. This can take about 2 weeks.
- Store the leaves in a sealable jar or container. Store in a cool, dry and dark place.
Prepare
Unlike many other herbs, add lovage early during cooking!
Add lovage leaves and stems early during the preparation of hot dishes. Then the herb can release much of its flavour.
