

Summer savory


Summer savory is the annual variety of savory. If this herb is sown in May, the plant is mature when the bean picking begins. Hence the name. The taste of savory is spicy, slightly peppery. Just before the plant starts flowering, the taste is at its best. Because of its peppery flavour, this herb is a godsend in a salt-restricted diet. It is best to store summer savory in the fridge.

Storage
Store summer savory in cling film in the fridge. The sprigs will keep for at least a week this way.
This herb is also good for drying. Just before the plant flowers, the flavour is at its best. If you want to dry the herb yourself, that is also the best time to pick the leaves.
Drying is done like this:
- Spread the leaves on a clean (dry) tea towel.
- Turn them over occasionally.
- Can you crumble the leaves? Then they are dried. This can take about 2 weeks.
- Store summer savory in a sealable jar or container. Store in a cool, dry and dark place.
Preparation
Use sprigs whole when cooking. Remove the sprigs before serving.
You can also pick the leaves from the sprigs and use the leaves as they are, either whole or chopped.
