



Chickpeas




The chickpea looks most like a white hazelnut in appearance, but it is a legume. The chickpea grows 2 peas at a time in a pod on a bush. Originally, this legume comes from North Africa. In the Netherlands, you can buy them dried or canned. Chickpeas are the main ingredient in dishes like hummus and falafel. It is best to store dried chickpeas in a dry, cool and dark place.

Store dried chickpeas in a cool, dry and dark place to keep them good for at least a year.
How can I tell if dried chickpeas are no longer good? The chickpeas are mouldy or have sprouted. You can quickly recognise this deterioration by looking carefully.
Prepare
Soak chickpeas for 6-8 hours and then cook them for 1-1.5 hours until tender.
Do not worry about breaking your chickpeas when cooking them, as they keep their shape well.
Canned or bottled chickpeas can be heated without boiling.
It is better not to eat chickpeas raw. There is a natural toxin in beans, lectin. If you cook the beans, the substance is no longer harmful.
