Radicchio salad with walnuts

Ingredients

2 persons

1 tablespoon of sultanas
1 head of radicchio
1 bush of chicory
1 tablespoon of olive oil
2 teaspoons of honey
1 tablespoon of balsamic vinegar
250 grams of peeled walnuts

Preparation

This light, quick salad of radicchio with chicory sultanas balsamic and walnuts is delicious as an appetiser.

  1. Wash the sultanas and soak them in some water.
  2. Clean the radicchio and chicory and cut the vegetables into narrow strips.
  3. Divide between 2 plates and sprinkle the sultanas on top.
  4. Whisk a dressing from the oil, 1 tablespoon of water, honey and balsamic vinegar. Drizzle the dressing over the salad and sprinkle the walnuts on top.
