


Durian



Durian is a tropical fruit. The fruit is the size of a rugby ball and has a prickly skin. The durian is best known for its pungent smell, hence the name stink fruit. The riper the fruit, the stronger the smell. The flesh is like large mandarin segments, but skinless and with an orange-brown stone in each segment.

Storage
You can keep the segments in a sealed container in the fridge for a day or two (you will probably want to throw away the container afterwards).
You can also freeze them; in fact, the fruit is always imported frozen.
Preparation
The fruit cracks open by itself when ripe. You can scoop out the fruit or further process the flesh. You cannot eat the seeds raw, but you can roast them and then use them further.
