

Ethiopian mustard


Ethiopian mustard is also called Abyssinian mustard or Abyssinian cabbage. This leafy vegetable has long petioles. The leaves are light green with purple veins. Harvested young, the flavour is slightly sweet and spicy. Stewing or cooking the vegetable makes the flavour somewhat milder. Oil is also made from the seeds of the plant.

Storage
Store Ethiopian mustard in the fridge in an open plastic bag. It stays good for 2-3 days to a week this way. Cut Ethiopian mustard can be kept in the fridge for 1 day.

Wash the Ethiopian mustard. Cut off a piece from the bottom of the stems. You can compare this vegetable to spinach in processing.
