Finger limes (lime caviar)

Finger limes are also known as the caviar among citrus fruits because of their juicy little balls reminiscent of caviar. Finger lime caviar is the shape and size of a finger, and they grow to a length of 5-10 centimetres. When you cut open the finger lime and squeeze it, the tiny balls come out. They are deliciously fresh and intensely flavoured.
Preparation & storage
Prepare
Finger limes have a unique texture similar to caviar, but without the fish flavour. Finger limes are often used as decoration in dishes because of their distinctive appearance, but they can also be used as an ingredient. For example, the juice can be used as a flavouring in sauces, dressings and cocktails. The peel can be used to flavour dishes and the balls can be used as a garnish on fish dishes.
Storage
Finger limes are best stored in the fridge to preserve their flavour and quality. Moreover, this will allow them to keep for around 1 to 2 weeks, allowing you to enjoy this delicacy for longer. If you serve them as part of a dish, it is advisable to remove the lime caviar from the fridge and let it come to room temperature for the best taste experience.
