We know long beans from our connection with Suriname. It is a long, green pod that resembles a stretched green bean. Long beans grow on a climbing plant that easily reaches 4 metres in height. Its flavour is spicier than green beans. These long and healthy pods contain folic acid (vitamin B11), potassium and vitamins B1 and B6, among others. It is best to store long beans in a cool place.

    Long beans will keep in a cool place (around 12ºC) for several days.

    You can keep long beans in the fridge for 2 days if necessary. There is a risk that this tropical vegetable will discolour.

    Do you have any leftover cooked long beans? Put the long beans in a sealable storage container. You can then store the long beans for another 2 days in the fridge or 3 months in the freezer.

    Prepare
    Wash the long beans and remove the tips. If necessary, remove the stiff strands. Then cut the beans into pieces of, say, 3 to 4 cm.

    Cook them in a little water for about 15 minutes until tender. But of course you can also braise or stir-fry them.
