


Golden velvet leg (Golden Enoki)



The taste of the golden velvet legume is sweet, fruity. The golden velvet legume grows as a bundle and has narrower tapering stems and semi-circular caps. In the wild, the golden velvet leg is found in the mountains, often near the snowline. Here, these mushrooms grow in bunches.

Storage
Preferably use the golden velvet leg as fresh as possible. Store the golden velvet leg in the refrigerator WITH FOOD BOW at a temperature between 4° and 7°C. They will then keep for up to 2-3 days.
Leave them in the packaging to prevent dehydration. Do not store mushrooms with strong-smelling vegetables, such as leeks and onions, as they easily pick up odours.
Preparation
Cut a piece off the bottom of the stalk, then slice or quarter them.
Like other mushrooms, do not boil, fry or braise them too long. Then the golden velvet leg loses its flavour and firmness.

Cleaning the golden velvet mushrooms
Cut the mushrooms loose from the nutrient base. Discard the culture medium.
Clean dry with a kitchen paper or mushroom brush. Do not wash, or they will fill up with water, which will remove the flavour.
