Endive is a leafy vegetable and belongs to the same plant species as chicory. The vegetable is also known as sugar loaf. This refers to another relative, the chicory root. This root is used as a sugar substitute. The head is green on the outside and pale yellow inside. The flavour is between that of chicory and endive.

Storage
If you bought fresh chicory, you can keep this vegetable in the fridge for several weeks.
Tip: Do cover the chicory with a kitchen towel. This will prevent the vegetable from drying out.
You can also freeze raw chicory. Blanch (heat briefly) the vegetable shortly before freezing. You can then store the vegetable in the freezer for up to one year.
Leftover cooked chicory? You can keep this leftover in a storage container for 2 days in the fridge or 3 months in the freezer.
How can I tell if chicory is no longer good? The chicory becomes mouldy or discoloured. You can quickly recognise decay by smelling, looking or tasting.
Preparing
You can eat chicory either raw or cooked. Remove the green tops. Cut off a slice from the bottom and cut away the cone-shaped 'pit'. Wash the chicory in plenty of water. If necessary, cut the chicory into pieces.
