


Patisson



Like the pumpkin, the patisson is a fruit vegetable. Pattisons are white, green or yellow. Patissons are about 15-20 cm tall. In the Netherlands, the patisson is also called turban pattison. The pattison, like most other vegetables, is low in calories.

Storing Pattison
Store Pattison in a cool (12-15°C) dry place. Do not keep them colder than 8°C. Then they will keep for several weeks. Using part of the patisson? Cover the cut surface with cling film and keep the rest in the fridge. You can also freeze the patisson. Just before freezing, blanch (heat briefly).
How can I tell if the patisson is no longer good? The patisson becomes mouldy or has rotten spots. You can recognise this decay by looking, smelling or tasting.
Cleaning/preparing the patisson
Wash the patisson. Halve the patisson and remove the skin. Remove the seeds with a spoon or knife. Cut the flesh into cubes.
Only with a young patisson with thin skin, peeling is not necessary.

Cooking: 5 - 10 minutes (cut into pieces)
Braising: 20 - 30 minutes
Stir-frying: 5 - 10 minutes

Deep-frying: 4 - 5 minutes
Microwave oven: 3 - 5 minutes
