



Purple sprouts




The purple sprout is the sister of the green sprout. It has a funky purplish colour. Brussels sprouts are sweeter and nuttier than green sprouts. Purple Brussels sprouts contain lots of vitamins, minerals and fibre as well as antioxidants. Purple sprouts are available approximately from the end of October to February.

Storage
You can store Brussels sprouts in a net or an open bag in the refrigerator for 3 to 7 days.
Brussels sprouts can also be frozen, but first blanch them for about 3-4 minutes. Then you can store them in a tightly closed plastic container or bag in the freezer at -18°C for up to 12 months.
Preparing
Cut off the underside of the sprouts. Remove any loose leaves and wash them well.
When cooked, the sprouts lose their purple colour. Therefore steaming, roasting or stir-frying is the best way to prepare the purple Brussels sprouts.

Deep-freeze (first blanch for 3-4 minutes): 12 months
