



Sugar snaps




Sugar snaps are among the fresh legumes you can eat all over, just like mangetout and green beans. They are somewhat similar to mangetout, but are a lot more bulbous and taste sweeter. Actually, sugar snap peas are not yet ripe when they are harvested. The seeds are still in the pod, but that is what makes them taste so good. During cooking, sugar snap peas remain crisp and fresh green.

Storage
Sugar snaps can be stored in the fridge for 4 days. Store them in a paper bag or open plastic bag with holes.
Sugar snaps can also be stored on the fruit bowl for 2 days.
Sugar snaps can also be frozen. Blanch for 2-3 minutes (heat briefly) just before freezing.
Do you have leftover cooked sugar snaps? Put the snow peas in a sealable storage container. You can then store them for another 2 days in the fridge or 3 months in the freezer.
How can I tell if fresh sugar snap peas are no longer good? The sugar snap peas are limp or mouldy. You can quickly recognise this decay by looking, smelling or tasting.
Preparation
Wash the vegetables before use and cut a tip off the ends. Some sugar snap peas have threads along the edges. You can pull these threads off when cutting off the ends.
You can also blanch sugar snaps for 1 minute. Then you can incorporate them into a salad or an oven dish.
Raw sugar snap peas naturally contain a toxin (lectin) that is rendered harmless by cooking or blanching. Therefore, do not eat sugar snaps raw. Sugar snap peas in glass jars, tins and from the freezer have already been pre-cooked.
