


Tamarind



The tamarind is a long, brown pod that you can eat either unripe or ripe. An unripe tamarind is green in colour and sour in taste. A ripe tamarind is brown in colour and sweet and sour in flavour. Tamarind is an ingredient in several sauces, such as Worcestershire sauce. It is also an important ingredient in Asian cuisine.

A ripe tamarind can be kept in the fridge. This also applies to an opened jar of freshly pressed pulp.
Preparation
Break the skin with your hands and remove the soft pulp. This can then be further processed in your dish.
If you have bought freshly pressed pulp, 25 grams of tamarind will usually make 300 grams of tamarind water. Check the instructions on the packaging to make sure this is the same.
