

Wing beans


The wing bean is also known as goa bean. It is related to the string bean. The 'peas' in this bean are nutritionally similar to the soya bean, they are packed with protein. Leaves, flowers and roots are also eaten. The flavour is similar to that of the string bean. Only the texture is crunchier, fresher and waterier. Rather similar to green asparagus.

You can store the pods in the fridge for about 3 days. Make sure the frayed ends do not turn black. Protect the pods from drying out.
How do I know if fresh wing beans are no longer good? The wing beans are limp, have a sour smell or are mouldy. You can quickly recognise this decay by looking, smelling or tasting.
Preparation
You can process the pods just like the string bean by cutting them into diagonal pieces. But work quickly. Under the influence of oxygen, the beans quickly turn brown.
Young beans can be eaten raw, steamed or fried.
