


Tomatillo



The tomatillo is also known as Mexican aardcress. The tomatillo is related to the golden berry (Physalis). The round berry is enveloped by a dried papery shell. The green unripe flesh is sour and tart while the yellow riper flesh is sweet, aromatic and gooseberry-like in flavour. The tomatillo has traditionally been used mainly in combination with chilli peppers.

Storage
Fresh tomatillos, with casing ('jacket'), will keep at room temperature for a week in a paper bag and good for up to two weeks in the fridge.
If you remove the jacket and put them in a plastic bag, you can store them for up to three weeks.
You can also freeze tomatillos. Do remove the casing in that case.
How do I know if tomatillos are no longer good? The tomatillos are mouldy or limp. You can quickly recognise this decay by looking, smelling or tasting.

Deep-freeze: 8-12 months
Preparation times
Cooking: 15 - 20 minutes
Roasting/grilling: 10 - 15 minutes at 230°C
Cleaning the tomatillo
Remove the casing by peeling or rolling the tomatillos briefly first. As the fruit has a waxy, sticky coating, it's better to wash them briefly.
