

Water spinach (Ong choy)


Water spinach is also known as Ong Choy or Kangkung. The leaves and petioles can be eaten like spinach or used raw in salads. The leaves have a pleasant, sweet flavour. The stems have a slightly sharper flavour. Like many other leafy vegetables, water spinach is highly nutritious and rich in vitamins and minerals.

Storage
Fresh water spinach is best eaten on the day of purchase. Is that not convenient? Then you can keep water spinach in the fridge for 2 days.
You can also freeze water spinach. Just before freezing, blanch for 2 minutes (= brief heating). Spinach can then be kept in a well-sealed plastic bag or container for up to 12 months at a minimum of -18°C.
Do you have any leftover cooked water spinach? You can keep leftover water spinach in the fridge for 2 days or in the freezer for 3 months in a sealed storage container.
Water spinach is a fragile vegetable. How can I tell if water spinach is no longer good? The spinach is limp, discoloured or gives off a sour smell. You can recognise this decay with your senses: look, smell well or taste.
