


New Zealand spinach



The name New Zealand spinach may be confusing. This 'spinach' belongs to the purslane family and looks different from common spinach. New Zealand spinach has thick leaves that can be prepared like spinach. The flavour is similar to spinach, but a little sweeter.

Storage
New Zealand spinach is best eaten on the day of purchase. Is that not convenient? Then you can keep New Zealand spinach in an open plastic bag in the fridge for 2 days.
New Zealand spinach can also be frozen, but first blanch for about 2 minutes. Blanched, it can be kept in a tightly closed plastic bag or container for up to 12 months at a minimum of -18°C.
Preparation
The leaves and young stem tips are prepared in the same way as spinach, although the leaves shrink less when prepared.

Refrigerator: 2 days
Deep-freeze (first blanch for 2 minutes): 12 months

Stir-fry: 3 - 5 minutes
Braising: approx. 5 minutes
Steaming: approx. 3 minutes
