



Yellow frisée




Frisée is a type of endive and is also known as curled endive. This endive has a looser head, with thinner and curly indented leaves. The taste of frisée is more bitter than ordinary endive. By covering the head for a while, the colour turns a nice yellow and the bitter taste disappears.

Yellow frisée is a fragile vegetable, best eaten as soon as possible after purchase.
Packed in a plastic bag with holes, yellow frisée can be kept in the fridge for about 2 days.
In a well-sealed plastic bag or container, you can also store yellow frisée in the freezer after blanching it for at least 2 minutes. You can store yellow frisée in the freezer at a minimum of -18°C for up to 12 months.

Cooking: approx. 5 minutes
Stir-frying: 2-3 minutes
Braising: approx. 5 minutes
Cleaning yellow frisée
Remove the leaves from the head. Remove any tough, outer leaves. Wash the leaves by immersing them in plenty of water, let them dry and then tear them into pieces. If you cut frisée, the curly effect is lost.
If there is a lot of sand in it, it is smart to wash the yellow frisée again afterwards.
