


Kale



The French very appropriately call this green cabbage 'chou frisee', or curly cabbage. This is because the thick leaves have curly frayed ends. Most people only see kale cut ready-made in the refrigerator or freezer. The bright green colour indicates the quality of the kale.

It is best to store kale in a cool, dry place and eat it as fresh as possible.
You can also store kale on the bush in the fridge. Kale will keep for 3-5 days in the fridge.
Pre-packaged and sliced kale can only be kept in the fridge for 1-2 days.
Raw kale should be blanched for about 3 minutes before freezing. After that, you can store it in the freezer for up to 12 months.
Cooked kale can be kept in a well-sealed plastic bag in the freezer for up to 3 months (at a minimum of -18ºC).
Preparing
Cleaning fresh kale is easy: break the leaves from the stem and cut off thick stalks. Wash the leaves thoroughly in plenty of water.
Then you can roll and cut the leaves or cook them whole. Cabbage shrinks while cooking, but does not release much moisture. So add plenty of water when cooking.
How do I know if kale is no longer good?
Pre-cut kale becomes limp, sours or mouldy. You can quickly recognise decay with your senses. So look, taste or smell well.
