Stir-fried kale with pork tenderloin

Stir-fried kale with pork tenderloin

280gr vegetables p.p.

Ingredients

2 persons

1 onion
1 red pepper
400 g ready-cut kale
1 tablespoon olive oil
pepper
100 g pork tenderloin

Preparation

1. Peel and chop the onion.
2. Remove the seeds from the pepper and dice the pepper.
3. Heat the olive oil in a wok. Fry the onion and meat for about 5 minutes on high heat. Add the pepper and fry for another 5 minutes on medium-high heat. Scoop out of the pan and keep warm in aluminium foil.
5. Add the kale to the wok in batches and, while stirring, let the kale shrink for about 3-4 minutes. Add 50 ml water and let the kale cook gently for about 5 more minutes.
6. Cut the pork tenderloin into strips.
6. Spoon in the pork strips, onion and pepper and season with freshly ground pepper. Enjoy your meal!

Menu suggestion: Delicious with new potatoes.
