Kale tofu scramble with toast
With seasonal products

150gr vegetables p.p.

Ingredients

2 persons

40 millilitres olive oil
200 grams of kale
320 grams of wholemeal sourdough bread
100 grams of red onion
400 grams of tofu
2 grams of saltless italian seasoning
1 gram of black pepper

Preparation

  1. Toast the wholemeal sourdough bread with a toaster.
  2. Meanwhile, slice the onion.
  3. Heat the olive oil in the frying pan. Fry the red onion for 2 minutes.
  4. Then add the kale. Stir-fry for about 2-3 minutes.
  5. Mash the tofu coarsely with a fork. Add to the pan along with the saltless italian herbs. Stir-fry for about 3-5 minutes. Season with black pepper if necessary.
  6. Serve the tofu scrambled eggs on the toasted bread.
