Ingredients
2 persons
40 millilitres olive oil |
200 grams of kale |
320 grams of wholemeal sourdough bread |
100 grams of red onion |
400 grams of tofu |
2 grams of saltless italian seasoning |
1 gram of black pepper |
Preparation
- Toast the wholemeal sourdough bread with a toaster.
- Meanwhile, slice the onion.
- Heat the olive oil in the frying pan. Fry the red onion for 2 minutes.
- Then add the kale. Stir-fry for about 2-3 minutes.
- Mash the tofu coarsely with a fork. Add to the pan along with the saltless italian herbs. Stir-fry for about 3-5 minutes. Season with black pepper if necessary.
- Serve the tofu scrambled eggs on the toasted bread.
