Stuffed sweet pepper with mackerel salad

120gr vegetables p.p.
Ingredients
2 persons
1 tablespoon lemon juice |
50g mixed lettuce |
4 basil leaves |
1 orange pepper |
100g smoked mackerel fillet |
100g low-fat cottage cheese |
1/2 red onion |
50g g gherkins |
pepper |
Preparation
1. Wash the pepper and cut into 4 quarters. Remove the seeds and seeds and cut the pepper into strips.
2. Cut the gherkins into cubes.
3. Chop the red onion.
4. Pick the mackerel fillet into pieces.
5. Mix the mackerel with the lemon juice, gherkin, onions and cottage cheese. Finely chop the basil and mix in.
6. Finally, give a small twist of pepper from the pepper mill over the salad.
7. Put some mixed lettuce in the bottom of a glass and put the salad on top. Enjoy!
Tip: Delicious with wholemeal baguette.
