Frisée is a type of endive and is also known as curled endive. This endive has a looser head, with thinner and curly incised leaves. The leaves have a fine texture. The heart of the head is yellow, while the outer leaves are green. The frisée is slightly more bitter than ordinary endive, especially the outer green leaves.

Preparation & storage

    Frisée is a fragile vegetable, best eaten as soon as possible after purchase.

    Packed in a plastic bag with holes, frisée can be kept in the fridge for about 2 days.

    In a tightly closed plastic bag or container, frisée can be kept in the freezer after blanching for at least 2 minutes. Frisée can be kept in the freezer at a minimum of -18°C for up to 12 months.

    Refrigerator: 2 days
    Freezer: 12 months

    Preparation times

    Cooking: approx. 5 minutes
    Stir-frying: 2-3 minutes
    Braising: approx. 5 minutes

    Cleaning fresh vegetables

    Remove the leaves from the head. Remove any tough, outer leaves. Wash the leaves by immersing them in plenty of water, let them dry and then tear them into pieces. If you cut frisée, the curly effect is lost.

    If there is a lot of sand in it, it is smart to wash the endive again afterwards.
