Fresh salad with tomato and goat cheese

175gr vegetables p.p.
Ingredients
2 persons
1 tomato |
2 tablespoons chopped parsley |
1 teaspoon liquid honey |
1 teaspoon mustard |
pepper |
150g frisee lettuce (can be replaced with endive) |
2 tablespoons olive oil |
1 1/2 tablespoons lemon juice |
2 slices wholemeal bread |
75g fresh goat cheese |
1 onion |
Preparation
1. Preheat the grill.
2. Wash and dry the frisée. Tear the leaves into pieces. Divide the lettuce between 2 plates.
3. Wash the tomato. Halve the tomato, remove the seeds and cut into wedges.
4. Peel and chop the onion.
5. Divide the onion, tomato and parsley over the lettuce.
6. In a small bowl, stir together lemon juice, oil, honey, mustard and freshly ground pepper.
7. Toast the sandwiches.
8. Crumble the goat's cheese over the slices of bread. Put the slices of bread under the hot grill for a while until the goat cheese warms up.
9. Drizzle the dressing over the salad and place the toasted sandwiches with goat cheese on top.
