Turnip greens salad

180gr vegetables p.p.
Ingredients
2 persons
2 bunches of turnip greens |
1 teaspoon honey |
1 tablespoon hazelnuts |
1 tablespoon oil |
1 lime |
1 small winter carrot |
Preparation
1. Cut the roots from the turnip greens. Wash the turnip greens and drain well.
2. Scrape and coarsely grate the carrot.
3. Roughly chop the hazelnuts. Roast the hazelnuts in a dry frying pan until golden brown.
4. Scrub the lime well and grate some of the zest. Make a dressing from lime juice, grated lime zest, 1 tablespoon water, the honey and oil.
5. Cut the turnip greens a little smaller and mix in the grated carrot and dressing. Sprinkle with the hazelnuts.
