Turnip greens

Turnip greens are true spring vegetables. This bright green vegetable is also known as 'throats'. Turnip greens are elongated leaves on a crisp stem. The vegetable resembles young spinach or rocket. Turnip greens are usually sold in bunches. The taste is slightly spicy.
Preparation & storage
Cut the carrots off the stalks. Wash the turnip greens in plenty of cold water. Drain well before further processing (unless you are going to cook them).
