Turnip greens are true spring vegetables. This bright green vegetable is also known as 'throats'. Turnip greens are elongated leaves on a crisp stem. The vegetable resembles young spinach or rocket. Turnip greens are usually sold in bunches. The taste is slightly spicy.

Preparation & storage

    Storage
    Turnip greens will keep for 2 days in the fridge. Preferably store the turnip greens in an open plastic bag. Do not store turnip greens with pears, apples or kiwi.

    You can also freeze turnip greens, but first blanch them for about 2 minutes (= briefly heat them). It can then be kept in a well-sealed plastic bag or container for up to 12 months at a minimum of -18°C.

    You can keep leftover cooked turnip greens in a sealed container in the fridge for 2 days or in the freezer for 3 months.

    How do I know if turnip greens are no longer good? Turnip greens are limp or wilted. You can recognise this decay by looking or tasting.

    Preparing
    Cut the roots from the stalks. Wash the turnip greens in plenty of cold water. Drain well before processing (unless cooking).

    If you want to boil turnip greens, cook them with the water on.
