Asparagus with almond crumbs

Asparagus with almond crumbs

300gr vegetables p.p.

Ingredients

2 persons

1 handpeeled almonds
1 slicebrown bread
600 gramsasparagus
1 teaspoonbalsamic vinegar
1 tablespoonliquid margarine

Preparation

  1. Peel the asparagus and cut off the hard bottom.
  2. Boil the asparagus in plenty of water for 8 - 10 minutes and let them cook in the cooling cooking water.
  3. Toast the slice of bread and crumble it.
  4. Chop the almonds.
  5. Heat the margarine and fry the breadcrumbs and almond crumbs until golden brown.
  6. Season this mixture with pepper and a little balsamic vinegar.
  7. Drain the asparagus, put them on a dish and sprinkle the crumbs on top.

Menu suggestion: Delicious with boiled eggs and mashed potatoes.
