Courgette spaghetti with chicken and Brazil nuts

Ingredients

200g whole-wheat spaghetti |
1 courgette |
1 yellow pepper |
1 lemon |
200g chicken breast in strips |
1 garlic clove |
1 tbsp olive oil |
50g Brazil nuts |
7 1/2g basil |
Italian herbs without salt |
freshly ground pepper |
Preparation
Add extra colour to your pasta with courgette spaghetti! Tasty, simple and packed with vegetables.
- Cook the whole-wheat spaghetti according to instructions on the packet.
- Then start by julienne slicing the courgettes. With a mandolin, this is done very quickly. Or you can buy ready-made courgette spaghetti in the supermarket.
- Set the courgette spaghetti aside for a while. Then dice the yellow pepper and put in a separate bowl.
- Grab a large bowl. Here you can grate the zest of the lemon and then add the lemon juice. Finely chop the garlic and add it to the bowl along with the Italian herbs. Here you can also add the chicken strips. Pour over some olive oil and add a little freshly ground pepper. Mix well.
- Cut or chop the Brazil nuts into chunks.
- Take a large deep wok or frying pan and put it on the hob. Add the chicken strips (with the lemon juice) and fry the chicken. Soon after, add the paprika. When the chicken is almost done, add the courgette.
- Briefly stir-fry for about 1-2 minutes. During those 1-2 minutes, tear in the basil leaves.
- Drain the whole-wheat spaghetti. Divide among plates and mix in the whole-wheat spaghetti.
