Courgette tzatziki by Joke Boon

100gr vegetables p.p.
Ingredients
1 medium courgette coarsely grated |
150 ml low-fat yoghurt |
100 g low-fat cottage cheese |
1 clove garlic finely grated |
2 tsp dried mint |
1/2 tsp sugar |
Freshly ground pepper |
1 tbsp olive oil |
1/2 tsp (apple) vinegar |
Preparation
Tzatziki, a fresh salad of cucumber, garlic and yoghurt from Greek cuisine. Because of the cucumber, the salad quickly becomes watery. You can very well avoid that by using courgette. That is a tasty alternative to cucumber version.
Stir yoghurt, cottage cheese, garlic, mint, sugar, pepper, oil and vinegar well together. Spoon in the courgette.
Tip: As courgette does not become watery, you can prepare the salad well in advance and keep it cool.
